Hearty & Wholesome Irish Stew

The Lucky Irish Ingredients 

1 1/4 pounds chuck beef, cut into 1 1/2-inch chunks
1/4 cup olive oil
6 large garlic cloves, minced
4 cups of broth
2 cups water
1 cup of Guinness
1 cup of red wine
2 tablespoons tomato paste
1 tablespoon sugar
1 tablespoon dried thyme
1 tablespoon Worcestershire sauce
2 bay leaves
2 tablespoons butter
3 pounds russet potatoes, peeled, cut
1 large onion, chopped
2 cups 1/2-inch pieces peeled carrots
2 tablespoons chopped  parsley

Directions For Stirring The Pot 

1 Sprinkle teaspoon of salt over the beef. Heat olive oil in a large,  pot over medium-high heat. Add beef and cook, without stirring, until nicely browned on one side, then use tongs to turn pieces over and brown on another side.
2 Add garlic to the pot with beef and sauté 30 seconds or until fragrant. Add beef stock, water, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce, and bay leaves. Bring to a simmer. Reduce heat to lowest setting, cover and simmer for 1 hour, stirring occasionally.
3 While pot of meat and stock is simmering, melt butter in another pot over medium heat. Add onions and carrots. Sauté onions and carrots until onions are golden. Set aside until beef stew has simmered for one hour.
4 Add onions, carrots and potatoes. Add black pepper and salt. Simmer uncovered until vegetables and beef are tender, about . Discard bay leaves. Tilt pan and spoon off any excess fat. Transfer stew to serving bowl. Add more salt and pepper to taste. Sprinkle with parsley and serve.

I bet you can almost smell that steaming pot of stew cooking right now can't you. If you don't have all the ingredients, do not worry, just get to your local grocer and pick up what you need, hurry home and start cooking. On a side note, I tend to always serve my Irish Stew with some yummy soda bread, especially if I am going to for the full blown traditional Irish effect.
