I like a little cinnamon in my batter and when I make the icing I use coffee instead of vanilla, in fact I use coffee all the time instead of vanilla.

Sounds like your kids are what they call “super tasters”. I have a couple daughters like that and when they were growing up cooking for them was sometimes really fun (that sarcasm) LOL. Super tasters can detect certain flavor profiles with much more intensity than the average person. Some people think it’s due to the presence of a couple of genes, while others think it’s because they have extra taste buds that keenly detect bitter and sweet. My daughters have outgrown a lot of it, although my oldest daughter still gets a heightened response right before her monthly and food tastes weird and things she ordinarily loves she can’t stand. If there was something about a recipe and I doctored it they know instantly and reject it LOL

Sure boxed cakes taste okay. The calories are close. The problem is with the chemicals. Find a fool-proof easy home-made recipe and go for it! Yes it matters!! You can SEE it in our kids!

I add jello for moist light cake,
And instant pudding to a dense cake,
Just add less water and more oil !!! Moist all the time!!!!!
Rude comments aside, I have found adding two tablespoons sour cream, two tablespoons sugar, and 1/2 teaspoon vanilla makes any flavor cake mix better. I use jumbo eggs instead of large eggs, too.

Milk instead of water really works. Best chocolate cake ever is the one made with mayonaise!

I add a TBS of Cocoa powder, a TSP of vanilla and swap half the oil with melted butter to a chocolate cake mix.
