This recipe makes enough for about four servings but you can always double or even triple the ingredients if you want plenty leftovers to enjoy again later. If you don't know how you feel about adding a strong nutty flavor to your pasta, you can leave the pine nuts out completely or only add in a few to give it just a little more flavor.

This takes about fifteen minutes to prepare and thirty minutes to cook so you can enjoy this heavenly sauce over your favorite pasta in no time!

The Ingredients To Gather:

  • 3  Red Bell Peppers
  • 2 Tablespoons Pine Nuts (optional)
  • 2 Tablespoons Olive Oil
  • 1/2   Onion
  • 2 cloves Garlic
  • 1/2 cup Heavy Cream
  • Parsley
  • Fresh Parmesan
  • 1/2 pound-1 pound Pasta

The Step By Step Directions To Follow:

  1. Roast red peppers, and  place in a Ziploc bag to allow to sweat. Peel the  skins from the peppers, then remove seeds. Set aside.
  2. Toast pine nuts in a skillet.
  3. Puree peppers with pine nuts.
  4. Cook pasta according to package directions.
  5. Over medium heat, drizzle in olive oil. Add diced onions and garlic and cook until soft. Pour in pepper puree and stir together. Add plenty of salt.
  6. Pour in cream and stir.  Taste and add more salt, if necessary. Add  pasta, and stir together.
  7. Place pasta into a bowl, top with  parsley and  Parmesan.
