    LEMON VELVET CAKE

    Ingredients To Gather:

    1¼ cups sifted all purpose flour
    1½ cups sifted cake flour
    ½ teaspoon baking soda
    1½ tsp baking powder
    1 teaspoon salt
    1½ cups sugar
    ⅔ cup vegetable oil
    ⅓ cup vegetable shortening at room temperature
    1 tsp good quality vanilla extract
    2 tsp pure lemon extract
    3 large eggs
    1½ cups buttermilk
    zest of two small or one large lemons, grated and finely chop
    Preparation To Follow:

    In the bowl of an electric mixer beat together the vegetable oil, shortening, vanilla and lemon extract.

    Beat the eggs in one at a time.

    Fold in the lemon zest.

    Fold in the dry ingredients with the buttermilk.

    As soon as it has no lumps in the batter, pour into the two prepared 9 inch cake pans.

    Bake at 325 degrees F for 30-35 minutes or until a wooden toothpick inserted in the center comes out clean.

    The Ingredients To Gather:

    3 cups powdered sugar

    1/3 cup butter or margarine, softened

    1-½ teaspoons vanilla

    2 tablespoons milk

    The Step By Step Directions To Follow:

    In medium bowl, mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in vanilla and milk.
    Mix everything together till it becomes nice and creamy. You can also add more or less powdered sugar depending on how thick you want your frosting.

    Helpful Hint:

    Add ½ a Teaspoon of Vanilla, Hazelnut or Lemon Extract if you want to change the flavor a bit. You can also zest alemon just a tad, ¼ teaspoon and throw it in

    Recipe is confusing. No mention of any lemon filling that I could find and the picture definitely looks like it has lemon filling between layers. Also the frosting looks yellow and the ingredients for that don’t indicate anything that would make it look yellow. Not a site I’ll visit again soon. The pictures are great, the recipe and instructions not so much. No need to have 4 pages to get a recipe.
