If You Like Chicken Caprese Then You’re Going To Really Enjoy This New Take On It…

If you're ready to take your cheffing skills to the next level, look no further. This dish is simple, somewhat exotic and will have your mouth watering over it three weeks later. As a matter of fact, why are we talking?

Let's Get Started…

To make this dish, you are going to need: 

 

  • 4 skinless chicken breasts

  • kosher salt & freshly ground black pepper

  • 2 tablespoons olive oil, divided

  • 3 large garlic cloves, minced

  • 2 pints cherry tomatoes, halved

  • 10 large basil leaves, finely chopped

  • 8 oz fresh mozzarella, sliced in 1/2 inch thick slices

  • balsamic vinegar, to taste

 

Now, let's get cooking! This is what you need to do:

  1. Take and season each side of the chicken breasts with salt and pepper, setting aside once seasoned.
  2. Place a large saute pan over medium-high heat, warming 1 Tbsp of olive oil.
  3. Once the oil is warm, add the chicken, covering the panning and cooking for approximately 10 minutes. Flip the breasts at 10 minutes, continuing to cook until the chicken is thorough, reaching an internal temperature of 165°F
  4. As the chicken cooks, warm remaining oil on medium-high heat in a medium sauté pan. Slide in garlic, cooking for about 1 minute. You will want to smell it cooking. Add tomatoes, continuing sauté until tomato skins start to wrinkle. This will take 5 minutes.
  5. Remove sauté from heat, stirring in the basil. Set this aside.
  6. Now, the chicken should be ready. Top each chick with 2 slices of mozzarella. Top this with tomato mixture.
  7. Cover chicken pan with a lid to allow the mozzarella to melt perfectly. This hold last about 12-2 minutes.
  8. Drizzle Balsamic. Don't put too much, but be sure to put enough. This needs to be balanced and flavorful. Not drenched.
