If You Like Rich Chocolate Desserts Then We Know This Loaf Cake Will Hit The Spot!

The mere thought of a Quadruple Chocolate Loaf Cake seems almost wickedly lustful and makes even the strongest of wills scream out YES! So let us give in to temptation; here is what you will need.

For the cake

  • 200 grams plain flour
  • ½ teaspoon bicarbonate of soda
  • 50 grams cocoa powder
  • 275 grams caster sugar
  • 175 grams soft unsalted butter
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 80 ml sour cream
  • 125 ml boiling water
  • 175 grams dark chocolate chips (unless you prefer milk)

For the syrup

  • 1 teaspoon cocoa powder
  • 125 ml water
  • 100 grams caster sugar
  • 25 grams dark chocolate (from a thick bar)

Make sure that all of your ingredients are at room temperature then preheat the oven to 325ºF. Put the flour, bicarb, cocoa, sugar, butter, eggs, vanilla and sour cream into the processor and blend for a small period of time until smooth. Scrape with a rubber spatula and process again while pouring the boiling water using a funnel. Turn off the processor and remove the lid and stir in chocolate chips.

Pour this batter into the prepared tin and slide into the oven, cooking for about 1 hour. After cooking for about 45-50 minutes add cocoa, water and sugar in small saucepan and boil for 5 minutes.  Take the cake out of the oven and sit it on a cooling rack  Then pour the syrup as evenly as possible all over the cake.
