If You Love Mexican-Styled Street Nacho’s Then You Need To Make Them Elote Style & Here’s Why!

Here's everything you need for these authentic Mexican street nachos. Once you make these elote nachos, you'll never go back to the plain version again!

Ingredients To Gather:

  • 3 ears of golden corn in the husk
  • 1 cups of mayonnaise
  • 2 cups of Mexican Crema
  • 2 cups crumbled Cotija cheese
  • 10 ounces queso fresco
  • 1 bag of tri-colored tortilla chips
  • ½ cup chopped cilantro
  • ½ cup of chopped green onion (to top at the end)
  • 2 tablespoons red chili powder or cayenne pepper
  • Half a lime, juiced

Directions To Follow:

Start by putting the grill on high heat and then grilling the ears of corn for 30 minutes. When they're done, remove them from the grill and let cool for 5 minutes. Next, remove the corn husks and cut the kernels off the ears and then set aside. Now, combine the Mexican Crema, chili powder and sour cream and set aside, and then place the tortilla chips on a baking sheet and toast them on the grill for a few minutes. Immediately after the chips are toasted, place them on a warm plate and then spread the creamy mixture from earlier evenly over the chips. Now, place the roasted corn on top of the creamy base, and then top with ample amounts of queso fresco, cotija cheese, chopped cilantro, and chopped green onion. Squeeze lime over the finished nachos and they're ready to serve.

Now that's what we call authentic Mexican food. If you're used to the plainer version served at many American Tex-Mex restaurants, these elote nachos will definitely surprise you…but trust us when we say it's a very good surprise indeed.
