Impress Those Guests With A Crispy Chicken Breast Topped With A Garlic Tomato Panzanella

I absolutely love making this chicken dish because it looks like a 5-star dish every single time when it's finished and it tastes amazing!

The Ingredients To Gather Up

  • 1/4 small onion, thinly sliced
  • 3 tablespoons distilled white vinegar, divided
  • 6 tablespoons olive oil, divided
  • 1 cup torn country-style bread
  • 2 skin-on, bone-in chicken breasts
  • 2 tablespoons vegetable oil
  • 1 pound cherry tomatoes
  • 3/4 cup parsley leaves with tender stems

The Step-By-Step Directions To Follow

  1. Heat 2 tablespoons olive oil in a large skillet. Add bread. Cook, tossing, until golden brown. Transfer to a medium bowl.
  2. Pound chicken and season with salt and pepper.
  3. Cook 1 chicken breast, skin side down, until golden brown. Repeat with remaining cutlet and 1 tablespoon vegetable oil.
  4. Cut tomatoes in half. Heat 2 tablespoons olive oil in same skillet over medium-high. Cook, tossing occasionally, until lightly blistered and starting to burst.
  5. Transfer to bowl with croutons. Add pickled onion with pickling liquid, halved tomatoes and parsley.
  6. Serve chicken with panzanella spooned over.

Finished!

This recipe does not call for any seasoning but I added some Salt and Garlic Pepper to the mix and it came out even tastier. Also if you are looking for a spicier, richer cook then fry the onion with some Turmeric before you add the bread & chicken.

    Recipe calls for bone and skin-on breasts, but it says to pound the chicken. Later in the recipe it calls them cutlets, and it also says to add the pickled onions along with the liquid. Am I misunderstanding something?
