It’s Almost Impossible To Have Just One Of These Zesty, Rich Lemon Bars

When you have a sugar craving you probably reach for a candy bar or a nice, thick slice of chocolate cake. And who can blame you? Chocolate is a no-fail dessert choice that's decadent, indulgent and guaranteed to satisfy even the most demanding sweet tooth. However, it's good to mix things up every once in a while and turn to something a little different.

That's why we were thrilled to see that one of favorite desserts — the classic lemon bar — is making a comeback. While it's taken a backseat to more showy desserts like chocolate pie, it's a beloved favorite for a damn good reason, and we for one think it's about time that more people start to appreciate its  many charms!

Plus, it's amazingly easy to make, so you don't have to be an expert pastry chef to whip up a flawless batch that will leave your guests in awe!

Ingredients To Gather:

  • 2 cups Flour
  • 1/2 cup Sugar
  • 1/4 teaspoon Salt
  • 2 sticks (1 Cup) Salted Butter, Cut Into Small Cubes
  • 1-1/2 cup Sugar
  • 1/4 cup Flour
  • 4 whole Large Eggs
  • Zest And Juice Of 4 Medium-sized Lemons
  • Powdered Sugar, For Sifting

Directions To Follow:

  1. For the crust: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan with butter.
  2. Stir together the flour, sugar, and salt. Add the butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press into the prepared pan and bake until golden around the edges, about 20 minutes.
  3. For the filling: Stir together the sugar and flour. Crack in the eggs and whisk to combine. Add the lemon zest and juice and mix until combined. Pour over the crust and bake about 20 minutes.
  4. Allow to cool in the fridge for a minimum of 2 hours, then sift powdered sugar over the top before cutting into squares.
  5. (Use an 8 x 10 pan if you'd like the layers to be a little thicker.)

We're drooling just thinking about how amazing these lemon bars taste. They're perfect for dessert, of course, but because they're lighter than many other desserts, they're ideal as a snack or with a hot cup of tea.
