This incredible salad makes enough for one serving but the ingredients can be doubled to make more. This salad takes about fifteen to twenty minutes to prepare. Everything can be chopped up and grilled ahead of time and assembled later if needed.

The Ingredients To Gather:
- 4 ears of corn on the cob
- 1 or 2 pints cherry or grape tomatoes
- 2 avocados
- 5 sprigs cilantro leaves
- 2 Tablespoons fresh lime juice
- 2 Tablespoons fresh lemon juice
- 2 Tablespoons olive oil
- salt, pepper, more cilantro to taste
The Step By Step Directions To Follow:
- Fire up grill.
- Peel down, don’t remove, husks from ears of corn, pull off silk on cob.
- Grill corn in husks, turning occasionally, until the cobs are a little charred, 15 minutes.
- Remove ears from grill, cool.
- Halve tomatoes, quarter them.
- Cut kernels off cob into bowl.
- Add tomatoes, cubed avocados, half-mashing the avocado into the rest of the mixture without making it too pasty.
- Mix in cilantro.
- Make vinaigrette by combining lime zest,lemon zest, olive oil.
- Drizzle over top of salad, fold it all together, season with salt, pepper, cilantro to taste.
