Looking For Something Light Yet Flavorful? Check Out These Bacon, Potato & Cabbage Croquettes

Here's that great tasting, healthy and make in no time meal! The entire family will love you for this one and they will never know how good for them it is!

Here Is What You Need To ‘Fool' Them: 

  • 1 lb mashed potatoes (3 cups)
  • 8 oz cabbage or 8 oz kale, steamed and shredded
  • 1 egg, beaten
  • 4 oz sharp cheddar cheese, grated
  • nutmeg, grated
  • salt
  • black pepper
  • all-purpose flour (for coating )
  • vegetable oil (for frying )
How To Make Everything Together: 
  1. Mix the potatoes with cabbage or kale, egg, cheese, nutmeg and seasoning. Divide and then shape into eight croquettes or six if you want them a tad bigger.

  2. Toss them in flour or breadcrumbs whatever you prefer.

  3. Then heat about a half inch of oil in frying pan until hot. Then fry them for about 3 minutes on each side till golden brown.

Finished!

Make with a salad with a low fat dressing and you have a great meal that the whole family will love or serve alone as a great healthy snack.

    It looks great but I don’t understand about the potato and cabbage mixture!?!?!?! It looks like only a potato wrapped in bacon.
