Make Every Dinner Into A Fiesta With These Rich, Creamy Enchiladas!

Here's everything you need for these enticing enchiladas. They're ready in just 1 hour (including both prep and cooking time), so they're ideal for weeknight dinners.

Ingredients To Gather:

  • 1 1/2 cups shredded Cheddar cheese
  • 1 onion, chopped
  • 12 (10 inch) flour tortillas
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (3 ounce) can chopped green chilies, undrained
  • 1 (8 ounce) container sour cream
  • 1/2 cup shredded Cheddar cheese

Directions To Follow:

  1. Start by preheating the oven to 350 degrees Fahrenheit and then heating a large skillet over medium-high heat.
  2. Put the chicken breast into the skillet and cook until it's not pink in the center. This usually takes about 10 minutes.
  3. Next, take the chicken, along with the 1 1/2 cups cheddar cheese and the onion, and divide all three evenly among the tortillas.
  4. Roll up the tortillas and place them with the seam down in a 9×13 inch baking pan.
  5. Now, warm the cream of chicken soup and the green chilies over medium heat in a saucepan.
  6. Add the sour cream and stir the entire mixture until it's completely heated.
  7. Pour the mixture over the tortillas and then add the rest of the cheddar cheese on top.
  8. Finally, bake about 25 minutes.
  9. You'll know it's done when the cheese is melted and the sauce is bubbling.

Finished!

Sounds tempting, doesn't it? We recommend pairing these enchiladas with rice, tortilla chips and guacamole or salsa, or perhaps some tender Mexican corn. Whatever you choose, it's bound to be a hearty and satisfying meal!
