5. Father's Day Breakfast Casserole

I love eggs so much, that I was overjoyed to find this recipe, which is just as hearty and filling as any breakfast casserole I could imagine. The “egg” mixture is made using tofu, and vegan sausage is used in it for the “meat.” The great thing about this is that it is a great foundation to build on. You can add your favorite veggies or anything you like! I usually put a ton of garlic, onion and bell pepper.
