Move Over Hamburger Helper…This Beefy Noodle Casserole Is To Die For!

This beef casserole has everything you need to make a hearty meal the whole family will love. It's similar to a Talerine recipe, if you've ever had one. This recipe definitely has a cool old school feel, like you grandmother herself passed it down to you. Enjoy!

Things You Will Need:

  • 2 Tbsp olive oil

  • 1 medium white onion, peeled and chopped, about 1 1/2 cups

  • 1 bell pepper, seeded, ribs removed, finely chopped, about 1 cup

  • 3 cloves garlic, minced, about 1 Tbsp

  • 1 28-ounce can whole peeled or crushed tomatoes

  • 1 1/2 pounds ground beef

  • Salt

  • 4 ounces mushrooms, sliced

  • 12 ounces egg noodles

  • 1 1/2 cups frozen corn, defrosted

  • 1 15-ounce can of black olives, strained and chopped

  • 8 ounces cheddar cheese, grated

How To Prepare:

  1. To start, you should pre heat your over to 350 degrees Fahrenheit. Boil your water to cook the pasta.
  2. Next, sauté veggies until soft, add garlic, then add tomatoes. Simmer for about ten minutes then set the heat on low.
  3. In a separate skillet you'll want to brown your meat. Be sure not to over crowd the pan. You'll want your meat just cooked on both sides and in pretty big chunks. Don't forget to season with salt and pepper. Then add meat into the tomato mixture.
  4. In the beef skillet, saute your mushrooms. Then add these to the tomato mixture.
  5. While all of this prep is going into your sauce, you should be keeping an eye on your boiling water and cooking the pasta. Cook as directed and drain.
  6. Put every thing in a casserole dish and pop in the oven. You'll stir in the corn, chopped olives and some of the cheese goes inside and on top.
  7. Bake for about a half hour.

Note: Obviously, the kids are going to be obsessed with this dish. So you'll want to consider a double batch so you have enough leftover to enjoy again.
