1. Greek Salad with Roasted Beets, Olives and Feta

For something tangy, flavorful, heart-healthy, and different, try a Greek salad. This one has roasted beets in it, which takes just a bit more prep, but they make a great replacement for tomato, and add a unique flavor to the mix.

2. Fresh Green Bean Salad with Balsamic Dressing

Here is something new! A salad without greens, but using green beans instead! If you feel like something a bit more crunchy and hearty, this is a good choice. This one has bacon, feta, and tomato added. It is amazing! Try swapping out the feta for blue cheese or Gorgonzola! If you are vegetarian, skip the bacon, or replace it with sunflower seeds.

 3. Gena’s Hemp Seed Tabouli

This is a tabouli salad, but using hemp seeds instead of bulgar. Hemp seeds are nuttier and packed with protein and omegas. This recipe is the healthiest on this list, being Vegan, gluten-free, grain-free, no bake/raw, nut-free, refined sugar-free, soy-free. 4. Glow Miracle Bowl

Speaking of Ohsheglows.com, I have to share this other salad from Angela, she calls it a “multi-vitamin in a bowl.” This salad is jam-packed with ingredients that will make you glow from the inside out.

5. Asparagus Salad Topped with Poached Eggs

This is a light yet filling lunch, with satisfying flavors. This one takes a bit of stove time, so maybe save this one for a Saturday afternoon instead of a work lunch. I had to add this because I love the combination, and the dressing is delicious!
