  • 1 teaspoon baking soda

  • 4 large eggs
  • 1 1/4 cups granulated sugar
  • 1 cup coconut oil
  • 2 teaspoons pure vanilla extract

  • 2 packages cream cheese
  • 1 stick butter
  • 1 cup confectioners’ sugar
  • 1/4 cup pure maple syrup
  • 1/4 teaspoon pure vanilla extract

The Step By Step Directions To Follow:

  1. Preheat oven to 350° F. Butter tcake pans and line with parchment paper.
  2. Whisk together flour, baking soda, baking powder, salt, cinnamon.
  3. Beat eggs until frothy, a minute. Add sugar & beat until thick and light colored, 3-4 minutes. Add oil .
  4. Beat in vanilla. Add flour mixture,mix until incorporated. Fold in carrots.
  5. Divide batter between the two prepared pans. Bake for 25-30 minutes.

  1. Beat cream cheese and butter together until fluffy.
  2. Sift powdered sugar over the cream cheese/butter mixture.
  3. Mix until combined.
  4. Add maple syrup, vanilla extract.
