Nothing Beats Our Famous Homemade Recipe For Broccoli & Cheddar Soup

This incredible soup makes enough for six servings but you can always double the ingredients if you want more to eat for another meal. It takes about fifteen minutes to prepare and twenty-five minutes to cook.

Let's Get Started!

The Ingredients To Gather:

  • 1 bunch broccoli
  • 1 onion
  • 1  red-skinned potato
  • 1/4 cup  flour
  • 3 cups  chicken or vegetable broth
  • 1/4 teaspoon  nutmeg
  • 1 cup extra-sharp Cheddar
  • 1 teaspoon Worcestershire sauce
  • One can  evaporated milk
  • Kosher salt and  ground black pepper
  • 2 scallions

The Step By Step Directions To Follow:

  1. Separate  stems,  florets from  broccoli. Trim,  discard  bottom of  broccoli stems, peel outer layers.
  2. Finely chop  stems, coarsely chop florets, set aside separately.
    Mist  pot with nonstick cooking spray,  heat over medium heat.
  3. Add  broccoli stems, onions, potatoes, cook,  7 – 10 minutes. Add  flour,
  4. cook, stirring, until lightly toasted, 2 minutes.
  5. Stir in broth, bring to boil.

The Additional Directions To Follow:

Lower your  heat so it still simmers, allow to cook for about fifteen minutes.
Add florets and approximately half a cup of water to another pan.  Allow to boil and then put a cover on it and let it keep steaming for just about five minutes. Combine everything in your pot with the florets to the rest of your soup and add in the nutmeg. Make sure to combine everything well. then take it off the heat.  Add your  cheese, Worcestershire,  along with your milk.Sprinkle with some salt and pepper and top with your scallions.
