Our New Favorite Snack Food: Waffle Pulled Pork Sliders

Here's everything you need for these savory waffle pulled pork sliders. This recipe makes 12 sliders.

For the Slow-Cooker Beer Pulled Pork:

2 lbs. pork butt
2 cups brown ale
½ cup brown sugar
¼ cup mustard
¼ cup molasses
1 tablespoon Worchestire
1 teaspoon cinnamon
1 tablespoon kosher salt
1 teaspoon fresh cracked pepper
½ garlic powder
¼ teaspoon cayenne pepper

For the Waffled Potato Pancakes:

4 cups cold mashed potato
3 tablespoons chopped green onions
3 tablespoons diced red peppers
1/3 cup cheddar cheese
1/4 cup finely grated parmesan cheese
4 tablespoons canola oil
1 egg, lightly beaten

Directions to Follow

To make slow-cooker beer pulled pork: Place pork but in the bottom of slow cooker. In a large bowl combine and mix remaining ingredients. Pour mixture over pork butt. Set slow cooker to low for 8 hours.

To make potato pancakes: Preparation: Heat waffle iron and cover with oil. Place four tablespoons of flour onto a pie pan or a shallow plate. Mix all the ingredients in a bowl. Use an ice cream scooper to dump potato pancake onto plate with flour. Flatten scoop into a round disc. Place potato pancake into a waffle iron and cook until golden brown.

To assemble: Place coleslaw on one waffled potato pancake, layer with pulled pork, onion rings, pickles and top with second waffled potato pancake.

Wow! we've never had waffles quite this way, and we're willing to bet most other people haven't either. We really like this unexpected combination of some of our favorite foods. Delicious!
