I absolutely love whenever the opportunity to make something amazing out of leftovers. At times, leftovers can be my arch nemesis. They take up a ton of space in the fridge and I have to convince the rest of the family to eat them with me so we don't end up wasting food. When this happens, I try to reinvent the leftover. I pretend I am on Chopped in my very own kitchen, and I get creative.
This recipe reflects what you can do with mashed potato left overs. And ok, let's be honest, leftover mashed potatoes don't happen very often — at least in my home. And if they do, these are one of the leftovers that aren't a hard sell. But still! These potato pancakes turn last nights dinner into this mornings over the top breakfast performance.
The pancakes are super easy to make and all you need is leftover mashed potatoes (or you can just make them fresh for this recipe, or you can buy store bought mashed potatoes), some parmesan cheese, egg, onions, and parsley.
Traditionally Potato Pancakes can be served at breakfast with a little bit of Bacon in the mix or at dinner time. You are going to love this recipe and when you find out how good they taste you will instantly know why they are so damn popular!

My brother makes potato pancakes with grated raw potatoes,which are really good, but this recipe sounds like I would love them.
egg, chopped onion, and enough flour to hold together, fried in a little olive oil is one of my favorites. (potato patties)

My Grandmother would always make enough mashed potatoes so we could have these often. They were GREAT !!!!
The ones made with grated potatoes are called LATKEYS. They are a Jewish favorite, and I like them a lot.

I do that too. My family is so crazy for them, I start with an 8 quart bowl of shredded potatoes. I add about 6 eggs and a cup of flour, after I wash the shreds and squeeze all the water out. Fry in about a half inch of oil. We always eat these with bean soup made from a ham hock for flavor.

3 cups of mashed potatoes
¼ cup Parmesan cheese
1 egg, lightly beaten
6 Tbsp of flour divided
1 Tbsp of grated onion or green onion
1 Tbsp of fresh chopped parsley
Canola oil to saute ——– How To Prepare:
In a mixing bowl combine potatoes, cheese, egg, 3 Tbsp of flour, onion and parsley.
In a separate plate add 3 Tbsp of flour for dredging the pancakes. Fill an ice cream scoop or heaping tbsp with the mixture, shape the pancakes in yours hands and dredge them in flour.
Add 3 Tbsp of canola oil to a non-stick skillet and saute them about 2-3 min on each side over medium/high heat or until golden brown. Add more oil if needed.
Remove mashed potato cakes to a plate lined with a paper towel to soak up excess oil. Serve with a dollop of sour cream.
Note: Serve with apple sauce or sour cream. You can even serve with scrambled eggs and crispy bacon. It’s up to you! Enjoy!
