Quick Chicken Enchiladas

My family loves Mexican food and sometimes we just don't have the time to go out and eat. So I decided to learn how to make chicken enchiladas. After a few trial and errors, I managed to come up with a creamy enchilada recipe that ended up being a hit for my family! They liked it so much that it is now a weekly meal on the menu. I have listed the ingredients and steps for you below! Why not make some chicken enchiladas for your family today?

INGREDIENTS:

¾ cup chicken broth
6 chicken breasts
2 cans (10 oz. each) red enchilada sauce (you can use green if you desire)
2 cans (8 oz.) tomato sauce
1 small can of green chilies (drained)
1 small garlic clove
1 (8 oz.) sour cream (I use Knudsen)
Mexican rice cooked – 2 cups for filling / rest for side dish
4 cups of Mexican style shredded cheese
¼ cup of cream cheese
1 small can of chipolte peppers
1 small white onion chopped
Corn tortillas (6 inch) 2 packs
1 – 13×9 inch pan

Make It:

Step 1: In a large frying pan, cook the chicken breasts until cooked. Once cooked, simmer in the chicken broth. Add in the tomato sauce and bring to a boil.
Step 2: Add in garlic cloves, green chilies, and chipolte peppers and simmer until softened.
Step 3: Stir in onions and cook for 10 minutes.
Step 4: Add in the Mexican rice and stir. Continue to stir and add in the cream cheese until completely dissolved. Next add in the sour cream.
Step 5: Heat your oven to 350 degrees
Step 6: Spread 1 cup of red sauce or green sauce (your choice) in the bottom of your 13 x 9” pan.
Step 7: On a flat surface, lay out one tortilla and add one scoop of the chicken filling, a handful of cheese and a tablespoon of red enchilada sauce.
Step 8: Roll up the tortilla and place seam side down in the pan. Continue this process until the pan is filled with enchiladas.
Step 9: Pour about ½ cup of red enchilada sauce over the enchiladas and sprinkle with cheese to cover.
Step 10: Bake for 30 minutes. Top with your favorites such as olives, sour cream, salsa, tomatoes, or crunched tortilla chips.
