There is nothing I love more than lemons! I literally put them in everything I make. From cocktails to pancake batter, a squeeze of lemon is the perfect addition. Unfortunately, I am not a baker. Dessert has never been my forte, but when I get a craving for something, I’d much rather make it at home where I know I can stretch my hard-earned dollar.
As I searched for a dessert with my favorite ingredient, I wanted something light and sweet. This Lemon Curd Mousse Cake had it all, cool, fresh ingredients but best of all it called for a whole cup of lemon juice!
Yes, it there’s a little extra wrist work for the curd but I knew it would be worth it.
This dessert was everything I wanted, light and sweet with the perfect amount of tart that only lemons can bring perfectly balanced by the slightly salty flavor brought by the shortbread cookie crust.

The directions don’t tell what to do with the curd. Mix with mousse? Pour over top? Some of both?
