Scrumptious Traditional Irish Chowder

St. Patrick’s Day is just around the corner and there is a lot to be excited about when it comes this National day for celebration!

What a great time to celebrate with food, spirits and tradition.  

My family is Irish and for generations we have always had one home cooked favorite that stands out above the rest and that is Great Grandpa’s Irish Chowder.

Being that Great Grandpa was a fisherman it was easy to come by Cod, if you’re not a fisherman you still can buy the cod at a sea food market or even your local grocery store.  

This meal is one of my top favorites and I can definitely say it is delicious and very easy to make!

This dish has simple flavors and texture that is appealing to one who likes chowder.  

I have listed the recipe below. Go ahead and give it a try and tell us what you think.

Serving size is for 6 hearty people

Ingredients:

1 tablespoon of unsalted butter
2 white onions, peeled and finely chopped
2 teaspoons of thyme
2 bay leafs crunched
10 potatoes (red russet), peeled and chopped
1 teaspoon of Sea salt and ground black pepper
4 Cod fillets- Cubed
4 mussels in their shells, cleaned
1 tablespoon of finely chopped flat-leaf parsley
½ cup of sour cream

Time to make it:

Step #1: In a large pot, melt the butter over a medium-high heat. Add in the onion and fry for 3–4 minutes until softened.

Step #2: Slowly stir in the thyme leaves, bay leaf until lightly fired

Step #3: Stir in the potatoes and cook for 2–3 minutes before adding the Mussels. Stir in the salt and pepper.

Step #4: You will simmer for 15-20 minutes until the potatoes are tender yet firm. Add in the cod, and simmer for 10 minutes. Throw out any mussels that have not opened while cooking.

Step #5: Remove the pot from the heat and slowly stir in the parsley and sour cream. Do not stir vigorously as the fish chunks will break up.

Step #6: Serve in a deep bowl with the crackers or sourdough bread on the side.

Tips: I usually buy sourdough bread bowls and serve the chowder in the bread itself and the family loves it.

I also sprinkle cheese on top to add a little extra cheesy flavor
