Simple & Delicious Corned Beef Hash!

Step One (Ingredients) 

Vegetable oil, 2 tbsp.
Cooked Corned Beef, at least 8 ounces or more.
1 Chopped Onion.
I Chopped Bell Pepper.
Peeled and shredded potatoes, 2 med sized should be sufficient.
Butter, 4 tbsp.
Eggs, 4 med or large size.
Ground Pepper and Kosher Salt to taste.
Sliced Cheddar Cheese, 4 slices.  

Step Two –

Heat oil in skillet over high heat. Add corned beef and cook, stirring  until it releases some fat and browns. Stir in onion, bell pepper and potatoes and cook, until crisp on the bottom. Continue cooking, turning the hash as it browns.

Step Three – 

Heat the butter in skillet over medium-high heat. Fry the eggs, season with salt and pepper.

Step Four – 

Place the cheese slices on top of the hash, reduce the heat and let sit until the cheese melts, about 1 minute.

Step Five – 

To serve, top each portion of hash with a fried egg.

Remember, it does not have to be breakfast time to enjoy this classic offering. As a matter of fact, I can happily enjoy Corned Beef and Has hanytime of the day. So dig in, and get to cooking! P.S. for an extra special treat, serve your eggs over easy or over medium!
