Chocolate truffles are considered by most of us to be an extra special treat. Maybe it is because they are so pretty or maybe it is because they are too pricey to have all the time. However, this method for making your own chocolate truffles just make change everything. You'll be shocked when you see how easy they are to make!

The former chopped and the latter heated until bubbling. The two are combined, the cream poured over the chocolate and then stirred, slowly, with a silicone spatula or a whisk to make ganache.

Pour  ganache into  shallow pan, stick it in fridge for a few hours, until it’s firm. Scoop  up into  firm, fudgy ball. Roll it in something—the most classic medium is cocoa powder—to contain its borders and you have a truffle.

Use this as a basic ratio:
6 ounces chocolate (this could be chips or chopped bar chocolate)—you can use any kind you like:
1 cup heavy whipping cream
1/2 cup cocoa powder, for rolling
This will yield about 15 heaping teaspoon-sized truffles.

 

Mix something in 
This is a good place to add something creamy and/or thick, like nut butter or jam, or something textural, like chopped toasted nuts or shredded dried coconut. For every 6 ounces of chocolate, use 2 to 3 tablespoons of add-ins.

Steep something in  cream.
Add  fragrant things—fresh mint leaves, lemon or orange zest, lavender buds, Earl Grey or green or chamomile tea, chopped pistachios, a dried or fresh chile, vanilla beans, whole spices like star anise or cinnamon sticks, to the pot with  cream, bring  cream just to a simmer, remove it from  heat, let sit, covered, for at least 15 minutes. Fish out  flavoring, bring  cream up to a vigorous simmer, pour over  chocolate.

Here are a few ideas:

Semisweet chocolate + fresh mint leaves steeped in cream + rolled in cacao nibs
Dark chocolate + chile + lemongrass + cream + rolled in coconut
Milk chocolate + tahini + cream + rolled in toasted sesame seeds
