Sweet & Sour Chicken Bundles

The Sweet & Sour Chicken Bundles are super easy to make and they only require a few directions. The best part about this recipe is that they can be adapted to work with any type of meat or vegetable.

The Ingredients To Gather

  • 1/3 cup chicken broth
  • 2 tablespoons vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 2 teaspoons oil
  • 1 tablespoon sugar
  • 2 teaspoons cornstarch
  • 2 ½ teaspoons canola oil
  • 1 pound chicken breasts
  • 2 peppers
  • 2 scallions
  • 2 garlic cloves
  • 2 teaspoons minced ginger
  • 1 cup pineapple
  • 12 egg roll wrappers

The Step-By-Step Instructions

  1. Whisk together the first seven ingredients. Set the sauce aside. Heat 1 tablespoon of the canola oil in a large skillet over medium heat. Add the chicken and cook until its no longer pink.
  2. Add the peppers, scallions, garlic, ginger and cook, stirring often, until the peppers are slightly tender.
  3. Pour in the sauce and bring the mixture to a boil. Continue to cook the mixture until the sauce has thickened slightly.
  4. Stir in the pineapple, then remove from heat.
  5. Heat the oven to 375 degrees and coat a standard 12-cup muffin tin with cooking spray.
  6. Center and press an egg roll wrapper into each well of the tin to form a cup.
  7. Fill each one with the chicken mixture.
  8. Fold in three corners of each wrapper, then lightly brush the inside of the remaining corner with water and press it in place on top of the others.
  9. Brush the tops of the bundles with oil.
  10. Bake about 15 minutes.
