Avocado Omelet

Tis' the season for avocados! We seem to always have a surplus of big and delicious avocados this time of year, my Husband just brought home a huge box of them from the coast! Make a scrumptious omelet featuring avocados, they are packed with nutrition and will leave you with energy that will last all day long! Start off by sauteing up a few mushrooms. While they are cooking beat your eggs. Then stir in your onion, mushrooms and avocados!

Season to taste and enjoy!

Mushroom, Bell Pepper and Cheese Omelet

Lets spice things up a bit with this mouth watering omelet! I don't know about you, but I love to bring the heat on to kick start my morning! Start off with saute some onions, bell peppers and mushrooms, when they are almost done add some Tabasco sauce. Prepare your eggs, go ahead and beat them with a little bit of salt and pepper. Once your omelet is cooking add some cheese on the top and serve with some salsa! Delicious in no time at all!

Chicken Omelet

You had chicken for dinner last night and now you have leftovers. In my house I have to get creative to get my family to actually eat leftovers. Why not use that chicken for breakfast? Shred up your chicken into small pieces and season if needed. After beating your eggs get them cooking in your pan. Add your chicken, it is great with a little bit of fresh garlic. As always put some cheese in your omelet as well. This is incredibly basic and you can add other ingredients if you desire. The sky is the limit!

Mushroom Swiss Omelet

A oldie but a goodie! Some times I am in the mood for some good old traditional foods and this fits the bill! This is a great recipe for the kids to learn to cook too! As always get your eggs beat and prepped. Saute up your mushrooms with a little onion. This omelet needs LOTS of cheese, I recommend using a few different types! Lets be honest, you can NEVER have TOO MUCH cheese! Add it all together and cook it up! This recipe called for a Mornay sauce over it, but it will be just as scrumptious with out.

Fruit Omelet

Yes you read that correctly! Most have heard of serving fruit as a side with breakfast, but lets make fruit the headliner! This is a wonderful omelet for a hot summer morning, talk about refreshing! You will still get protein from your eggs but your taste buds will be star struck with this leading lady! Pick some of you favorite fruits to cut up, honestly any fruit you like. I suggest using a minimum of 3 different fruits, there is no maximum. Beat and prep your eggs. Add some sugar in with the eggs while you beat them. Then cook your eggs and make a “empty omelet shell”. Spoon in your fruit and voila! You can drizzle a topping of honey or any other sugar packed substance if you wish!

I hope you have learned anything can go into a omelet! The only absolute must have ingredients are eggs (duh) and cheese.

Another tip to keep in mind is how large to make your omelet. It can be a little time consuming making multiple omelets to feed your family, so make one or two big ones!

Hopefully you are going to take the Omelette Challenge! I promise you will not be disappointed. Just plan ahead and go shopping to get all of your ingredients before you start.
