Tangy Tropical Fruit Salad

The Summer Sun is heating things up a bit and nothing is worse than cooking in a hot kitchen! Cool things down a bit and stir up this amazing tropical fruit salad. This delightful little dish does not have any artificial sweeteners in it and uses all organic ingredients!

The bite of the ginger, at the end, gives this dish a spicy little kick at the end and the grated coconut gives it elegance. If you are serving this dish as a dessert item then we suggest that you serve it in a champagne or wine glass with one dollop of whipped cream.

Turn that summer sun into a tropical breeze as you lay back in your hammock and enjoy this tasty little treat.

Ingredients

2 cups (1-inch) cubed fresh pineapple
1 cup chopped peeled papaya or mango
1 cup sliced peeled kiwifruit (about 3 kiwifruit)
1/4 cup flaked sweetened coconut
3 tablespoons honey
2 tablespoons fresh lime juice
1 tablespoons fresh, grated ginger
1 can or tub of whipped cream (optional)

Directions:

Put all the fruit (with the juices in the bowl) and stir together.

Add in the fresh ginger and stir.

Top it off with a sprinkle of coconut flakes.

Serve at room temperature or chilled.

You can additionally add your whipped cream if you want!
