Topping To Tackle: 

  • 1/4 cup unsalted butter, melted

  • 1/2 cup brown sugar

  • 6-8 canned sliced pineapple

  • 15-20 maraschino cherries

Cake Ton Conjure: 

  • 1 2/3 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, melted

  • 3/4 cup packed light brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 1/4 cup yogurt

  • 1/2 cup milk

  • ¼ cup pineapple juice (reserved from the canned pineapple)

  • 1 tablespoon vanilla extract

Directions To Follow:

  1. Preheat oven to 350

  2. Prepare topping: Place butter into 9-inch pie dish, sprinkle brown sugar, and top pineapple slices and arrange cherries between the slices. Set aside.

  3. Mix together flour, baking powder, baking soda, and salt. Set aside.

  4. Melt butter in the microwave

  5. Whisk in the sugars vigorously (mixture will be gritty)

  6. Whisk in egg, yogurt, milk, pineapple juice, and vanilla extract

  7. Slowly mix dry ingredients until no lumps remain. Batter will be thick.

  8. Pour batter into pan. (Do not overflow)

  9. Bake for 40-48 minutes.

  10. Cover loosely with aluminum foil at the 20 minute mark to avoid browning.

  11. Cool for 10 minutes.

  12. Invert cake on top of a serving plate.

  13. Slice and serve warm, room temperature, or even cold.
