Brown meat first, don’t lift lid during cooking, submerge meat in liquid to cook it faster, use cheaper cuts of meat because meat like chicken breast can get tough cooked a long time, all recipes are different don’t just use same time and temperature.
I browned meat before adding it with broth an it was still tough after 10 hrs! Ended up in it cooking for 2 days before it got tender, then ended up making a stew from it.
