3. Springtime Minestrone

This is a lightened up minestrone recipe, with asparagus as the main attraction. Asparagus is cheaper right now, so I've been taking full advantage of that, since it is my favorite vegetable. Asparagus is not an easy ingredient to integrate into soups and stews, it can be tricky blending it with the other flavors in a way that works and does not overpower them. Most people bake or grill asparagus, which is delicious as always, but this recipe makes for a nice change.

4.Lemon Braised Chicken & Beans with Mint Pesto

This dish tastes like a fresh spring garden! Your senses will be delighted with zesty lemon and fragrant herbs such as dill, thyme and mint, with chicken and white bean as the backdrop. What really makes this dish special is the mint pesto. You will want to be sure to serve this one with a good bread for when people can't get enough of that pesto and of course for soaking in the sauce at the end. This one is definitely a crowd pleaser.

For a delicious, decadent side dish, this one is the perfect fit! It's creamy and cheesy, but not too heavy. If you are preparing a delicious meal and won't have time to whip up a worthy side, this is when again, the crock pot is your friend! I also love that it is so full of herbal flavors. You can use any small potatoes for this recipe. It is sure to be a hit and a great option for Game Day!

6. Quinoa Breakfast Casserole

Crock Pots are not just for dinner! In fact, you can get a protein and nutrient packed power breakfast using the slow cooker, and it comes in the form of a frittata. Adding Quinoa gives it a healthy, crunchy, delicious crust. You can use any veggies you like with this, the recipe features tomato and spinach. I always have a really hard time making a frittata the right way and it is one of my favorite breakfast dishes. This is a great dish for a Sunday Brunch, when you just want to laze around for a bit then dive into a filling meal late morning. It only takes 3 hours in the slow-cooker.
