The Next Time You Make Beef Tenderloin Try It This Way; We Guarantee You’ll Eat It Right Up

Things You Will Need:

  • 2 (2 to 2 1/2 pound) center-cut pieces beef tenderloin
  • Extra virgin olive oil, for coating roasts, plus 3 tablespoons for sauce
  • Grill seasoning (recommended: Montreal Steak Seasoning for Steak by McCormick)
  • 5 whole roasted red peppers, coarsely chopped, well drained and pat dry
  • 2 cloves garlic, popped from skin
  • Handful flat-leaf parsley
  • 1 cup good quality pitted black olives, from bulk bins, such as kalamata, drained well
  • Salt and pepper
  • Crusty bread, sliced

How To Prepare:

  1. Heat up your oven to as high as it will go, usually around 500 degrees.
  2. Rub your meat down with olive oil and grill seasoning. Put it in the oven and roast for about ten minutes before turning it down to 350 degrees. Continue cooking for a half hour. Remove from oven and let rest for about a half hour before serving.
  3. Make sauce in a food processor. Throw in roasted pepper, garlic, parsley, olives, salt and pepper. While the processor is running, slowly pour in olive oil.
  4. Once your meat is rested you can thinly slice against the grain and then serve with crusty bread and sauce.
