This Mexican Chicken recipe makes enough for about eight servings but if you want enough for leftovers you can double the ingredients.

You can serve this dish with rice, in burritos or tacos, over salad or over chips to make delicious nachos. Any way you make it, it is super easy and only takes ten minutes to prepare.

The Ingredients To Gather:

  • 1 can diced tomatoes
  • 2 cans black beans
  • 1 can chicken broth
  • 1 can diced green chiles
  • 1/2 yellow onion
  • 2 cloves garlic
  • 1/4 cup cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 1/2 lbs chicken breast
  • Salt and black pepper, to taste
  • Optional toppings: chopped green onion, shredded cheese, avocado, cilantro, sour cream

The Step By Step Directions To Follow:

  1. In a slow cooker, combine tomatoes, black beans, chicken broth, green chiles, onion, garlic, cilantro, lime juice, and cumin.
  2. Add chicken breasts.
  3. Cook on low for 6-8 hours or on high for 4-6 hours.
  4. Remove from slow cooker and shred. Return shredded chicken to slow cooker and stir. Season with salt and black pepper, to taste.
  5. Cook for an additional 30 minutes to thicken.
