- 1 can diced tomatoes
- 2 cans black beans
- 1 can chicken broth
- 1 can diced green chiles
- 1/2 yellow onion
- 2 cloves garlic
- 1/4 cup cilantro
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 1 1/2 lbs chicken breast
- Salt and black pepper, to taste
- Optional toppings: chopped green onion, shredded cheese, avocado, cilantro, sour cream
The Step By Step Directions To Follow:
- In a slow cooker, combine tomatoes, black beans, chicken broth, green chiles, onion, garlic, cilantro, lime juice, and cumin.
- Add chicken breasts.
- Cook on low for 6-8 hours or on high for 4-6 hours.
- Remove from slow cooker and shred. Return shredded chicken to slow cooker and stir. Season with salt and black pepper, to taste.
- Cook for an additional 30 minutes to thicken.
