Let's Get Started!
The Ingredients To Gather:
5 thick-cut slices bacon
Olive oil, if needed
5 cloves garlic
1 medium green cabbage
1 cup low-sodium chicken broth
1 bay leaf
1 1/2 teaspoons kosher salt
1 1/2 tablespoons apple cider vinegar
Kosher salt
ground black pepper
The Step By Step Directions To Follow:
Heat 5-quart or larger Dutch oven on medium-high heat. Add bacon, cook, stirring occasionally, until crispy, most of fat is rendered, 8 – 10 minutes. Remove with slotted spoon to paper towel-lined plate. Take pot off heat, let cool few minutes. If you have less than 3 tablespoons of grease in pot, add olive oil to make up the difference.
Place Dutch oven back over medium-high heat; add garlic, stir. Place cabbage wedges cut-side down in pot. Cook undisturbed until cabbage pieces on bottom begin to slightly brown, 4 -5 minutes. Using wooden spoon, bring up cabbage sitting on bottom to rotate pieces on top to bottom of pot. Continue cooking until cabbage slightly wilts and more pieces brown on edges, 7 – 8 minutes.
Reduce heat to medium. Add broth, bay leaf, salt. Simmer, stirring every few minutes, until cabbage is tender, all the liquid is evaporated, 20 – 25 minutes.
Remove from heat, stir in vinegar. Taste, season with salt, pepper as needed. Scatter bacon on top.
