Vegetarians are some of the pickiest eaters I know and it's extremely hard to make anything for them besides starched-based alternatives that I am sure they are sick of.

When I was asked to host my best friends wedding shower I knew I was going to run into problems trying to find a good appetizer for everyone to enjoy because they where all vegans and vegetarians.

I honestly thought I was going to disappoint them with my cooking because there was nothing good to serve them besides salad, pasta and fruit… until I saw this recipe.

This face saving little appetizer made the day and it actually was pretty good. Honestly it's probably not the healthiest thing I could have served but it was quick to make, vegan friendly and it really had a lot of flavor mixed in.

Quinoa is just an interesting grain to work with and once you combine that with some grated vegetables and throw it in the fryer you come out with an award winning cake that can be shared with a lot of people.

Not only are these perfectly hand held little cakes look appeasing to the eye but they can have different toppings as well.

I added some prosciutto on top of them for my carnivorous friends with some sage.

This dish is so adaptable that you do not even need sauce to drown it in.
