The Ultimate Breakfast Pizza

The Ultimate Breakfast Pizza

Every Fall I get excited for pumpkin, but every spring I am anxious for asparagus! I love asparagus because it is one of the only vegetables I find savory and indulgent, they are simple to make and they are great for detoxing the body. I can throw a few sticks in a ziplock bag and put it in the microwave and have my lunch ready in less than 5 minutes or I can roast them with some garlic and have a delicious side for a complete meal.

Asparagus is a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium, and is packed with antioxidants, ranking among the top fruits and vegetables for its ability to neutralize cell-damaging free radicals. According to preliminary research, may help slow the aging process.

I've been craving a more unique, upgraded way to enjoy this favorite vegetable of mine. I don't want to bury it in a casserole or anything, but I do want something fresh and tasty. Breakfast pizza usually involves breaking eggs on top of a pizza before you finish baking it, so that the eggs bake into the pizza. In the past it has been hard for me to find pizza a decent breakfast choice, except for those occasions when I am either hungry or lazy so I eat it cold.

This recipe combines all of my favorite things into one: Breakfast, Bacon, Pizza, and Asparagus. It is almost too good to be true. This is something I would expect to be served at some swanky Sunday brunch spot in LA. Yet, it is simple and delicious and anyone can make it.
