These Caramel Toffee Pudding Cookies Are the Perfect Combination of Creamy and Crunchy

Ingredients to Gather

¾ cup butter, softened
1 cup brown sugar
2 eggs
1 (3.4 ounce) box vanilla instant pudding mix
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon salt
2¼ cups flour
1 8 ounce bag toffee bits
caramel for drizzle

Directions to Follow

Preheat oven to 370 degrees F.
Line cookie sheet with parchment paper.
In a large mixing bowl combine butter and brown sugar and beat well.
Add eggs and beat again.
Add pudding mix and vanilla and mix again.
Add baking soda, salt, and flour and beat until just blended.
Stir in 1⅓ cups toffee bits.
Place 1 inch dropfuls of dough onto lined cookie sheet, about 12 on a sheet and bake for 7 to 9 minutes.

Finally, melt the caramel and drizzle it on top of each cookie, and then sprinkle the rest of the toffee bits on top of that.
