These Cauliflower Mashed Potatoes Tasted So Delicious, We Almost Forget They Weren’t Made From Potatoes!

This recipe makes enough for about four servings but if you want more, just double the ingredients. They take about five minutes to prepare and about fifteen minutes to cook. You won't have to wait long at all to dig in!

The Ingredients To Gather:

1 large cauliflower core removed, cut into lflorets
1 cup water
1/2 teaspoon salt
2 Tbsp butter
4 Tbsp  sour cream
Chopped chives, green onions, and/or parsley for garnish
Salt and pepper to taste

The Step By Step Directions To Follow:

1  Place water in saucepan. Add  salt. Add cauliflower florets. Bring to boil on high heat. Lower  heat to  simmer. Cover , cook for 10-14 minutes, until very tender.
2  While cauliflower is cooking, melt butter in  saucepan on medium heat.
Once butter melts, it will begin to foam up a bit. When  foam subsides, look for amber colored bits forming at the bottom of the pan.
When  butter begins to brown, smell it. It will have a lovely nutty aroma. When you can see lots of flecks of browned bits,  melted butter smells wonderful, remove it from  heat, pour into  bowl. Butter can quickly go from browned to burnt, so keep an eye on it and work quickly when the butter starts to brown!
3  When cauliflower is cooked through and tender enough to mash with a fork, strain out all but a tablespoon or two of  remaining water.

4 Mash, stir in browned butter, sour cream.

5  Blend  mashed potatoes to as smooth a consistency as you would like. Add salt, pepper to taste. Top with chives, green onions, or parsley.
