These Cheesecake Minis Are a Whole New Way to Have Thin Mint Cookies!

Ingredients to Gather

13 Thin Mint Cookies, Ground
2 Tbsp. Butter – Melted
8 Oz Cream Cheese – Softened
1/2 Cup White Sugar
1 Whole Egg
2 1/2 Tbsp Buttermilk
5 Coarsely Crumbled Thin Mint Cookies
1/4 Cup Chocolate Chips
2-3 Tbsp Heavy Whipping Cream
3-5 Crumbled Thin Mint Cookies For The Topping

Directions to Follow

Start by putting the Thin Mint cookies into a food processor or blender and process them until they're fine crumbs, and then put them in a bowl and add 2 tbsp. of melted butter or margarine and stir until combined. (You can also crush the cookies by placing them in a bag and crushing them with a rolling pin or something similar.) Next, place the mixture in a muffin pan, placing 1 tbsp. in each cup. Set this aside and then make the filling.

To do this, soften the cream cheese to room temperature and place in a bowl, and then add the sugar and blend until smooth and creamy. Then add the egg and the buttermilk, and beat until it's smooth and has a silky texture. Take the mixture and add it to the muffin pan, filling the cups until they're almost full. Place the pan into an oven preheated to 350 degrees Fahrenheit, and bake for between 25 and 30 minutes. While this is baking, cut up a few more of the Thin Mint cookies into big pieces to use as a garnish. When the cheesecakes are done, let them cool for about 15 minutes and then top with chocolate ganache and the chopped up cookies.
