These Lemon Bars Are So Delicious That Everyone Will Be Asking You To Make Them!

This recipe makes twenty four large lemon bars or forty-eight smaller bars.  You can always double the ingredients if you need more. If you prefer to eat them slightly chilled, you can put them in the fridge and take them out about ten minutes before you want to eat them. You can also safe them for awhile because they freeze pretty well. If you like them slightly more tart, you can always add extra lemon zest.

The Ingredients To Gather:

CRUST:

  • 1 c. unsalted butter, softened
  • 2 c. flour
  • 1 c. powdered sugar
  • 1/8 tsp. salt

FILLING:

  • 6 e eggs
  • 3 c. sugar
  • 4 T. lemon zest
  • 1/2 c. lemon juice
  • 1 c. flour

The Step By Step Directions To Follow:

  1. Preheat oven to 350°. Spray a 9″ x 13″ pan with cooking spray and set aside.
  2. To make the crust, combine the butter, flour, powdered sugar, and salt in a medium bowl. Mix with a large spoon or your fingers until well combined. Shape dough into a ball and then pat evenly into your prepared pan. Bake for 15 to 20 minutes, or until set and just beginning to turn color.
  3. Prepare the lemon filling while the crust is baking. With an electric mixer on medium speed, beat together the eggs, sugar, lemon zest, lemon juice, and flour. Pour mixture over the baked crust and bake for an additional 30 to 35 minutes, or until golden brown.
  4. You don’t want to underbake , as the lemon filling will not set up properly. My oven bakes a bit on the light side, and I always bake this for 35 minutes.
  5. Let cool completely, then sift additional powdered sugar over the top.
