  • 20 Reduced Fat NILLA Wafers, finely crushed
  • 1/2 cup flour
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup cold margarine
  • 1 (8 ounce) package PHILADELPHIA Neufchatel Cheese, softened
  • 1 cup granulated sugar
  • 2 tablespoons flour
  • 3 tablespoons grated lemon peel, divided
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon CALUMET Baking Powder
  • 2 teaspoons powdered sugar

Directions To Follow:

  1. Start by preheating the oven to 345 degrees Fahrenheit and then line an 8-inch baking pan with foil. The foil should go over the sides of the pan. Mix the wafer crumbs, 1/2 cup flour and the brown sugar together in a bowl, and then cut the margarine in. You can use a pastry blender or two knives.
  2. The final product should look like coarse crumbs. Take the mixture and press it onto the bottom of the pan, and then bake for 15 minutes.
  3. Next, beat the cheese and the sugar on medium speed using an electric mixer, and then add the eggs and flour and mix.
  4. Then, stir in 1 tbsp. lemon peel, the lemon juice and the baking powder.
  5. Once it's mixed, pour it over the crust.
  6. Bake until the center is set, which usually takes between 25 and 28 minutes.
  7. Allow to cool, and then cover and refrigerate it anywhere from 2 hours to overnight.
  8. Sprinkle powdered sugar and the rest of the lemon peel on top immediately before you serve it.
