Here's everything you need for these creamy lemon squares. You can also freeze instead of chill them, for a frozen confection similar to ice cream.
Ingredients to Gather
6 Tbsp melted butter
1½ cup gingersnap cookie crumbs (takes about 8 oz of cookies)
1¼ cup whipping cream
⅔ cup sweetened condensed milk
⅓ cup lemon juice Coupons
3 or so drops of yellow food coloring if desired
Directions to Follow
Line a 9 x 9 inch square baking pan with foil or parchment paper.
In a bowl, combine the melter butter with the gingersnap crumbs. Pour into the lined 9 x 9 pan and press into an even layer in the bottom of the pan. Place in the refrigerator.
In a bowl, whip the cream to firm peaks. Then fold in the sweetened condensed milk, lemon juice, and food coloring if desired.
Keep folding until smooth. (It will look a little runny at first, but just keep folding.) Now, take the crust out of the refrigerator, pour the cream mixture on top, spreading it out evenly. Then place back into the refrigerator and chill for at least 2 hours before serving.
We really like serving these creamy lemon squares as snacks at elegant gatherings such as brunch with friends, or maybe a wedding or baby shower or a festive birthday party. They just add a little touch of class to any event!
