These Peach Fritters Are Our Favorite Summertime Snack

Here's everything you need for these indulgent peach fritters. This recipe makes 12 large doughnuts.

Ingredients to Gather

1 recipe Yeast Doughnuts
3 large peaches, diced (I don’t peel them, but you can)
Oil, as needed for frying

Honey-Cinnamon Icing

1 cup powdered sugar
3 tablespoons wildflower honey
1/2 teaspoon cinnamon
2-3 tablespoons milk or cream

Directions to Follow

While the oil heats, roll out the doughnut dough on a lightly floured surface into a rectangle about 1/2 inch thick. Size/precision of the rectangle isn’t important—just focus on an even thickness for the dough. Use a knife, pastry scraper, or bench knife to cut the dough into long vertical strips about 1/2 inch wide. No need to be precise—just eyeball it! Next, cut the strips horizontally about 1/2 inch wide—this should make a whole bunch of 1/2 inch squares. Again, no need to be precise! Divide the dough squares into 12 even portions. To shape each doughnut, take about 2/3 of one portion of dough squares and smoosh them gently together

Now, take about 1/4 to 1/3 cup of peaches and place them on top of the dough and then top with the rest of the dough squares and press together gently so that the dough squares stick to both the peaches and the rest of the dough. Used greased plastic wrap to cover the doughnuts, and then let them rise for between 30 and 30 minutes. While you're letting them rise, heat 3 or 4 inches of oil over medium high heat, and when it's hot, fry the doughnuts in batches, carefully dropping them into the oil. Fry for about 2 to 3 minutes on each side, or until they're golden brown on both sides. When they're done, place them on several layers of paper towels to drain, and then let cool for between 5 and 10 minutes.  Place the powdered sugar, honey, cinnamon, and milk or cream in a small bowl and whisk to combine to make a drizzly glaze. Drizzle the glaze onto each doughnut immediately before serving.
