These Pistachio Butter Cookies Are Delectable, We Couldn’t Believe How Easy They Were

This recipe makes enough for about eight dozen cookies so there should be plenty for everyone to enjoy. They take a while because the dough has to chill for about six hours and then they take about twelve to fifteen minutes to bake. They will smell so good, your mouth will be watering before you even taste them!

The Ingredients To Gather:

1 egg yolk
1 teaspoon vanilla extract
3/4 cup unsalted butter, at room temperature
2 cups  flour
1/4 teaspoon salt
2/3 cup powdered sugar
3/4 cup shelled pistachio nuts

The Step By Step Directions To Follow:

1  Stir  egg yolk,  vanilla. Cut  butter into a few chunks.
In  food processor, combine  flour, salt, sugar. Pulse just until mixed. Add  butter, pulse just until mixture forms crumbs. Add  yolk mixture. Pulse again, just until the dough forms large moist clumps.
2 Turn dough out onto  counter, quickly gather the clumps together into a cohesive dough without overworking. Use  bench scraper or a knife to cut the dough in half. Shape each half into a log that is 13-to-14-inches long, 3/4-inch wide, rolling them until they are smooth. Cut each log in half again to make 4 shorter logs.
3 Line rimmed baking sheet with parchment paper. Spread chopped nuts on the paper. Roll  logs in nuts, pressing pistachios into  dough so  logs are coated.

4  Wrap logs in plastic wrap, refrigerate until firm, at least 6 hours.

5 Set  oven to 350F. Line 2 baking sheets with parchment paper.  Cut logs into 1/4-inch slices. Set them on  parchment 1-inch apart.

6 Bake  12- 15 minutes, or until nuts begin to brown at the edges. They should be set and firm but not golden. Lift  cookies, still on  parchment paper, to wire racks to cool.
