Ingredients
- ⅓ cup Tropicana® Trop50® Orange Juice
- 2 tablespoons less sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- ½ teaspoon ground ginger
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- Four 4-ounce boneless pork chops, trimmed of fat
- 2 teaspoons cornstarch
- 4 fresh pineapple rings, sliced thick
Instructions:
1. In a small bowl prepare the marinade. Whisk together the orange juice, soy sauce, rice vinegar, brown sugar, ground ginger, onion powder and garlic powder.
2. Place the pork chops in a large resealable bag and cover with marinade. Place the pork chops in the refrigerator for 2 hours or overnight.
3. Transfer the pork chops to a shallow dish. Pour the marinade into a small saucepan.
4. In a separate small bowl, dissolve the cornstarch into 2 teaspoons of cold water, to make a slurry, and set aside.
5. In a small saucepan over medium heat, bring the marinade to a boil. Reduce the heat to low and add the slurry. Whisk together for 2 minutes until the sauce thickens and remove from heat; set aside.
You’ll preheat you indoor or outdoor grill to medium, lightly spray the rack with nonstick cooking spray then place the chops on the grill, brushing with the marinade. Each side of the chops will get about five minutes.
From there you will add the pineapple slices, grilling each side one or two minutes then, after letting the chops rest after grilling for a couple of minutes, you put the pineapple on top of each and you are ready to serve!
