These Pumpkin Toffee Cookies Are So Rich, You’re Going To Want A Glass Of Milk To Wash Em Down!

One bite will lead to two cookies and before you know it you might just finish the entire platter! Not throwing a Halloween party? It’s totally fine to just bake them because you feel like it now that fall is here!

Ingredients For The Cookies:

  • 1 cup butter, softened
  • 2 cups white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 cups solid pack pumpkin
  • 1 tsp vanilla
  • 4 3/4 cup all purpose flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 1/3 cups bag toffee bits

Glaze To Drizzle On Top: 

  • 1 stick butter
  • 3 cups powdered sugar
  • 2 tbsp heavy cream

Instructions To Follow: 

  1. Beat together butter and sugar until well creamed. Beat in eggs, pumpkin and vanilla.
  2. In a separate bowl, mix the flour, baking powder, baking soda, cinnamon and salt.
  3. Add dry ingredients to the wet and stir until combined. Mix in toffee bits.
  4. Preheat oven 350 F. Drop dough by rounded tablespoons onto cookie sheets. Bake for 14 minutes. Cool completely.
  5. Glaze: brown the butter in a saucepan over medium heat, stirring occasionally. Let cool. Mix in the powdered sugar, cream and water. Spread the glaze over cooled cookies.

A HUGE secret to this recipe is that if you actually eat these delectable desserts the DAY AFTER you bake them, it is actually way more moist and delicious! In order for this to happen, make sure you do not over bake the cookies.
