These Zucchini Parmesan Crisps Are The Perfect Snack!

You don't need a whole lot to make these crisps. In fact, they're so full of flavor you'll be shocked at how few ingredients they require!

Ingredients To Gather:

  • 1 cup all-purpose flour
  • 2 cups Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 zucchinis, thinly sliced to about ¼-inch thick rounds
  • 3 large eggs, beaten
  • 1 tsp dried oregano
  • salt and pepper

Directions To Follow:

For this recipe you'll need a large baking sheet. Line it with parchment paper. Start by laying the zucchini rounds on paper towels, and then sprinkling the zucchini with salt. Lay more paper towels on top of the zucchini and press together, and then leave for 20 minutes. Preheat your oven to 400 degrees Fahrenheit. Mix the breadcrumbs, Parmesan cheese and oregano on a shallow plate. You can also add salt and pepper. Pour the flour onto another shallow plate. You can also add salt and pepper to this. Take another plate and beat the eggs and season with salt and pepper. Finally, cover the zucchini in the flour mixture first, followed by the eggs and then the breadcrumb mixture. Place on the baking sheet and bake for between 20 and 30 minutes. You'll know the zucchini is done when it's golden and crispy.

This recipe serves 8, making it an ideal appetizer or snack to start off a large family meal or set out at your next party or gathering. If you're serving a large crowd, simply use more zucchini and adjust the ingredients so you have enough to season and coat the zucchini.

    Why not coat the zucchini first in egg then flour? The flour and rest of ingredients will stick better.
