Here's everything you need for this hearty homemade chicken stew. Feel free to experiment with the spices if you want to mix things up a bit.
Ingredients to Gather
Olive oil
2 cloves garlic, minced
1 onion, diced
2 russet potatoes, peeled and chopped
6 roma tomatoes, rough chopped
3 cups chicken broth
1 tbs tomato paste
2 chicken breasts, chopped
1 tsp. ground ginger
1 tsp. ground cumin
½ cup fresh basil, shredded
Fresh mint, for garnish
Salt and pepper, to taste
Directions to Follow
1. Heat olive oil over medium heat in a Dutch oven. Sautee the garlic and onion until translucent, about five minutes. Season with salt and pepper. Add the potatoes and cook for about 10 minutes, until slightly browned.
Next, place the vegetables on a platter, and then add the tomato paste, ginger and cumin to the pot and cook for about a minute. Add the chicken broth and whisk it in, scraping the bottom of the pan so it's clean. Next, add the chicken and the potatoes, onion, and garlic and bring to a low boil before lowering the heat and simmering until the potatoes are soft, about 45 minutes. Finally, break up some of the potatoes to make the stew thicker, and then place mint and basil on top of each bowl and serve.
Now, this is what we call homemade chicken stew! This is just the thing to have when you're feeling a little under the weather or you're just craving some comfort food. Yum!
