The following recipe comes from the file of country music star, Sara Evans. It’s easy and delicious! “Yum” is probably a word we over-use but in this case it is a perfect description!
Sara Evan's Missouri Dirt Cake
- 1 – 8 oz package cream cheese, softened
- 1 – 8 oz container frozen whipped topping, thawed (cool whip)
- 1 – 5.1 oz box instant vanilla pudding
- 2 – cups milk
- 1/3 – cup powdered sugar
- 1 – 14.3 oz package chocolate sandwich cookies, crushed and divided (Oreo cookies)
- Whisk together softened cream cheese and whipped topping in a large bowl.
- Prepare pudding using two cups of milk. Fold pudding and powdered sugar into the cream cheese mixture.
- Press 3 cups of crushed cookies in a lightly greased 9 x 13 inch baking dish, set aside remaining cookies.
- Spoon pudding mixture over cookies, sprinkle reserved cookies over pudding. Cover and chill in freezer for 3 hours or until firm.
- Remove from freezer 30 minutes before serving. Store any leftovers in freezer
Do not forget to allow the cream cheese to soften and allow you whipped topping to thaw before you start to whisk the recipe together. It takes only fifteen minutes to assemble and the author suggests actually freezing the cake then letting it thaw-out about thirty minutes before serving.
