This Easy Breezy Pork Loin With Veggies Is Made In The Crockpot & The Surprise Ingredient Is Genius!

This recipe takes only a few minutes to assemble and several hours in the crockpot. You'll have an amazing meal ready waiting for you when you come home after a long day!

Ingredients To Gather:

  • 1 1/2 – 2 pounds pork loin
  • 1 1/2 pounds baby new potatoes
  • 1 pound baby carrots
  • 1 large red onion, peeled and cut into large chunks
  • 4 garlic cloves, minced
  • 1/2 cup Musselman's Apple Butter
  • 1/3 cup Dijon mustard
  • 1/3 cup low-sodium soy sauce
  • 1 cup beef broth
  • Salt and pepper

Step By Step Directions To Follow:

  1. Place a large nonstick skillet over medium-high heat. Season the pork loin with salt and pepper. Place it in the skillet when skillet is hot. Sear the pork loin on all sides to seal in the juices, about 8-10 minutes. (Add 1 tablespoon oil if using a regular skillet.)
  2. On the bottom of a large 6 quart crock pot add the chopped onions, baby potatoes, and carrots. Place the meat over the veggies and surround it with the remaining vegetables.
  3. Whisk the minced garlic, Musselman's Apple Butter, dijon mustard, soy sauce, and broth together in a small bowl. Pour over the meat and veggies.
  4. Cover the crock pot. Turn heat on low for 8-10 hours, or high for 4-6 hours. When potatoes are tender, dinner is ready.
  5. Cut the pork into thin slices and place on a platter. Place vegetables around the meat. Season gravy with salt and pepper to taste. Pour the gravy over pork.
