This Easy Mexican-Inspired Casserole Will Have Everyone Coming Back For Seconds!

You won't be able to fathom the delight of this dinner, until you have actually laid first bite upon it. Yes, it's true… One taste and it will be love at first bite. And just like any love you have ever encountered, you will want to keep it thriving and well. Good until the last drop, this dish will sacrifice itself to keep you in good health!

What You Will Need:

  • 2 red bell peppers

  • 2 green bell peppers

  • ½ red onion

  • 2 cups frozen corn

  • 2 teaspoons chili powder

  • 2 teaspoon cumin

  • 2 cups Mexican cheese 

  • 18-20 corn tortillas

  • 1 can refried beans

  • 2 cups red enchilada sauce

The Step By Step Directions To Follow: 

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Sprinkle half of the veggies into a greased 9×13-inch baking pan, lined with thin strips of tortillas, tossing and adding salt. You will want to spread all of the refried beans on the tortillas first. You will also want to spread the sauce on the underside of the tortillas to ensure quality and lock in flavor to the tortillas. Use only half of the tortillas to line the bottom.
  3. Cover with the second half of the tortilla strips.
  4. Now, put the rest of the sauce, veggies and cheese on top of the second layer of strips.
  5. Cover this dish with foil. It is suggested to use cooking spray on the foil to keep from sticking.
  6. Bake for 15 to 20 minutes, until the sauce bubbles and the cheese is melted.
  7. Take this out and let it cool for a few minutes. Be careful, this will be hot!
